I can use this to change the font for existing notes, but not the font size.
Notes show the $TextFontSize as having whatever value I set in Edit > Document Settings > Text > Text font but they don’t actually update the size in the note content. Selecting any of the text and running command-t shows that it has the new font, but the old size.
Changing the paragraph spacing also does not seem to affect existing notes.
