A daft question. How to set the to set standard size and standard font?

@Advocate_Scotland, standard “size” for what? Notes on maps? Standard font for what?
Check out @latinhypercube 's suggestion and also Edit > Document Settings.
However, by looking for “standard”, I suspect you have a broader use case in mind.
If you want to (re-) set all or some of a note’s $Text, thrn look at the Format ▸ Style sub-menu and the items at the bottom of the menu.
Standard Font is the most useful reset, but sometimes you may also need to apply Reset Margins to remove unwanted ruler-based stylign (often a by-blow of copy/paste from web pages or rich text).
As already noted, for the TBX Doc as a whole, $TextFont as set via the Text Font control in Text tab of Document Settings (Cmd+8) is the place to look.
However, be aware that once any non-default text is added to $Text, the latter’s font is used for any further text even though $TextFont holds the default value.
