Styling existing $Text

Given ongoing confusion of how doc text defaults apply to existing text, I’ve updated a number of pages:

• Doc Setting: Text color
• Text Inspector: Text tab
• Text pane: Text area
• Font menu: Font sub-menu
• Style menu: Style sub-menu

Hopefully this will help give better access to the right guidance of re-styling existing $Text.
